What is gluten?

Gluten are proteins found in certain grains. Grains containing gluten include wheat and spelt. Gluten give elasticity and firmness to dough, giving breads and balls their airy texture.

Gluten is therefore found in all products made from any of the following grains: Wheat, Spelt, Khorasan wheat, Rye and Barley (groats). Gluten is therefore found in common products such as, for example: bread, cookies, cakes, pizza and pasta. It is also found in products where you would not expect it, such as: As an ingredient in soups (binder, vermicelli), sweets or desserts.
Is gluten unhealthy?
For most people, gluten is not unhealthy at all. In fact, normally your stomach and intestines just process it like other proteins from meat and eggs. However, for people with celiac disease (also known as gluten intolerance), gluten is dangerous.
